We’ve been especially social and my daughter started at a bigger pre-school earlier this month, so it makes sense that we might be exposed to more of whatever’s going around.
I’ve started making Elderberry lemonade and keeping it in the fridge, and so far no one is mad about it! Refined sugar free (sweetened with the raw honey in the elderberry syrup), this tangy, pink take on a summer classic is an instant pleaser. Here’s my recipe:
Elderberry Lemonade
1/2 c Elderberry Syrup
Juice of 1 lemon
1 c water
Lemon wedges, to serve
-
Combine in a jar or pitcher and place in the fridge, or pour directly over ice.
-
Serve with ice and a slice or wedge of lemon.
Feel free to sub the Classic Elderberry Syrup for our Double Extracted Elderberry, for a slightly boozy rendition - you may want to reduce the quantity of elderberry added, just a tad!
For sparkling lemonade, you can also make a concentrate with just the Elderberry Syrup and lemon, and then add to sparkling water before serving.
Consider yourself refreshed!
